I found this recipe in a Costco cookbook and it really is impossibly easy! This is my favorite cheesecake recipe that I've come across because it doesn't have a crust. I've never really been a fan of the graham cracker crust. Also, the outer edge of this cheesecake will cook a little bit more than the rest of it giving it the appearance of a crust anyways.
Ingredients:
3/4 cup milk
2 tsp vanilla extract
2 eggs
1 cup sugar
1/2 cup Original Bisquick Mix
2 8oz packages cream cheese, cut into 1/2 inch cubes, softened
Topping Ingredients:
1 cup sour cream
2 tbsp sugar
2 tsp vanilla extract
fresh fruit of your choice
Preheat oven to 350 degrees F. Grease a 9 inch glass pie plate with cooking spray. Combine milk, vanilla, eggs, sugar and Bisquick in a blender. Cover and blend on high speed for 15 seconds. Add cream cheese, cover and blend for 2 minutes longer, or until smooth. Pour into pie plate. Bake for 40-45 minutes, or until a knife inserted in the center comes out clean. Cool at room temperature for 1 hour. Refrigerate until chilled, at least 2 hours. To prepare the topping, combine sour cream, sugar and vanilla in a small bowl and stir until blended. Spread on top of the completely cooled cheesecake. Top with fruit if desired. Store covered in the refrigerator. Makes 8 servings.
And that's it! It really it that easy. Measure the ingredients, blend them and bake. Whenever I make this cheesecake it's never around for too long. Enjoy!
